Spanish saffron is the most famous saffron, noted for its intense flavor, yet lack of bitterness. Use Spanish saffron as the perfect choice for paella and fish.Saffron is the world's most expensive spice. Saffron is collected by carefully hand-picking the yellow-orange stigmas from a small purple crocus (Crocus sativus ). Each flower provides only three stigmas, which is dried after the painstaking collection process. It takes over 14,000 of these tiny stigmas for each ounce of saffron. Thousands of years ago saffron was used not only to flavor food and beverages but to make medicines and to dye cloth and body oils a deep yellow. Today this pungent, aromatic spice is primarily used to flavor and tint food like risotto, bouillabasse and seafood such as scallops or shrimp. Blessac guarantees freshness of flavor by hand packaging this 100% Spanish product in a glass jar with a cork seal. Each jar contains 1 gram (approximately 0.035 ounce) of Spanish Saffron (crocus sativus) from Blessac.
