Aged White Wine Vinegar with Tarragon by Martin Pouret is produced and bottled in Orleans, France in the traditional "slow process" since 1797. This method has been handed down from father to son for generations. The Martin Pouret firm buys its wines directly from the greatest vineyards as it takes a great wine to produce a great vinegar. Then begins the slow transformation of the wine into vinegar according to the unchanging rules that only Jean-Fracois Martin still applies. It is this which make the Martin Pouret vinegars so special.The wines will slowly metamorphose for three weeks in 220 litre barrels called "vaisseaux" at the constant temperature of 28 degrees, sheltered from the light. The vinegar thus obtained will be left to mature for six months in oak tuns in order to refine its aroma and bouquet.
