This Full Grain Mustard (Moutarde En Grains) is made in Beaune France, near Dijon, using the Fallot family's traditional methods. The Fallot family has enjoyed a worldwide reputation for exceptional quality, since 1840.
Dijon mustard was made from the seed of wild mustard, a yellow flowered cruciferous herbaceous plant, milled together with grape must and verjuice (the acidic essence of green grapes). However, since the discoveries made by Louis Pasteur, the juice of green grapes has been replaced by wine vinegar or alcohol, to give the assurance of regularity in both production and gustatory quality.
Fallot's "Seed Style" Full Grain Mustard is made by mixing mustard seeds directly with the verjuice, spices and flavorings. The mixture is rough milled without sieving in order to keep the seed whole. The content in dry matter must be at least 18% of the total weight. The reduced "bite" of this product, combined with the spices and flavorings added to it; make this Old Fashioned Seed Style mustard (also known as "full grain mustard") a particularly gastronomic product.
Each stone crock contains 9 ounces net weight (250 grams) of Full Grain Mustard (Moutarde en Grains) by Fallot from France.
